In 2016, the barrel cooperage, Tonnellerie Ô, launched a Master Cooper Program that was the first of it’s kind. The program offers participating winemaker’s a complete forest-to-barrel experience where they explore the oak forests of France with the Master Cooper of Tonnellerie Ô and seek out the highest quality trees that would showcase their individual wines. We were honored to be a part of this program starting in 2017.
Each year, winemaker, Matthew Moye, will follow the barrel making process from beginning to end; starting with sourcing the very best oak and finishing by customizing the cooperage methods for this oak such as aging time and barrel toasting. We use this complete forest-to- barrel experience for aging our single vineyard Cabernet Sauvignon: Rattlesnake Acres. Each barrel is built, toasted and finished by hand in the perfect specifications for our Rattlesnake Acres Cabernet Sauvignon each year. The results are spectacular and this wine will be sure to sell out year after year.
